Roasted Veggie Soup

I think this is the most nutrient dense and yummiest thing i've ever made… packed full of healthy fats, protein (hello bone broth), minerals, fibre, vitamins and antioxidants!!!! And legit tastes SO good.




2 zucchini

1 white onion

3 cloves garlic

2 large tomatoes

1 red bell pepper

1 orange bell pepper

3 red potatoes

4 tbsp olive oil

2 tbsp sea salt

3 tbsp italian seasoning

1/4C grass fed cream (milk works too!)

2C bone broth



Instructions

  1. preheat your oven to 400F

  2. Chop veggies, add olive oil and spices

  3. Roast for 45 minutes

  4. In a blender or using a hand blender add the cream and broth

  5. Dunk your favourite sandwich into this bowl of health
